So from time to time, I like to try out new eating habits and see if they help my Gastroparesis, weight, or overall health. After watching “What the Health,” like many other people, I was super motivated to try Veganism and actually felt pretty grossed out by meat and dairy products.
I’ve watched a TON of these types of movies- ones that promote a plant based diet for a multitude of reasons- (think animal rights, environmentalism, weight loss, even for curing diseases) but none have affected me quite as much as “What the Health.” I am not sure exactly why it stuck but an image of dead pigs rotting in a filthy trash bin, covered in flies, and then being packaged as bacon really didn’t sit well with me.
ANYHOO. I’ve tried to focus more on what I CAN eat rather than what I can’t. I go to sprouts and check out all the sale fruits & veggies for inspiration and get the yummiest looking ones. I also took to Pinterest where I found this amazing muffin recipe… But of course I altered it a tad to make it to my tastes!
Here is my Vegan Blueberry Muffin Recipe:
- 1 c soy milk
- 1 tsp apple cider vinegar
- 2 c flour
- 2 ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ½ c packed brown sugar
- 2 tbs granulated sugar
- ¼ c + 2 tbs canola oil
- 1 tsp vanilla
- Juice of ¼ lemon + a little zest from the rind
- 2 c fresh blueberries
INSTRUCTIONS:
- Pre-heat the oven to 375*
- Whisk the soy milk and apple cider vinegar together in a small bowl, set aside.
- In a bigger bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
- In an even bigger bowl, mix both sugars, canola oil, vanilla, and lemon (juice + zest). Add in the soy milk mixture. Add in the dry ingredients. Fold in blueberries gently.
- Line the muffin tins with paper cups.
- Fill paper cups with batter. The batter should be thick and you should fill them up 90% of the way as they don’t rise a ton.
- Bake for 20-25 minutes, check that they are done in the center with a toothpick or knife.
